Sole di Mare Brings Mediterranean Flavors to Anguilla’s Shores

Sole di Mare takes guests on a culinary journey along the Mediterranean coast, featuring handmade pastas, pizzas, and dishes inspired by the South of France, Greece, Spain, and Morocco. The restaurant embraces the resort’s farm-to-table philosophy, incorporating ingredients from Aurora Anguilla’s 10,000-square-foot hydroponic gardens.

The new Mediterranean concept complements the resort’s existing dining portfolio, which includes six restaurants offering diverse culinary experiences from casual beachfront fare to upscale steakhouse dining. Each venue showcases the resort’s commitment to fresh, locally-sourced ingredients paired with global culinary techniques.

Aurora Anguilla celebrates the reopening of the Merrywing Beach area, one of the resort’s most beloved enclaves, offering exceptional ocean-view accommodations with convenient access to the family pool. The refreshed enclave provides families and couples with spacious accommodations featuring contemporary design, natural light, and sweeping Caribbean Sea views.

Guests staying in the resort area enjoy proximity to multiple dining options. Nearby dining includes beachfront Breezes, the newly renovated Tokyo Bay, and D Richard’s Steakhouse at the Aurora International Golf Course, creating a world-class culinary experience steps from the pristine sands of Merrywing Beach.

The Café serves fresh pastries, waffles, homemade ice cream, savory bites, and expertly prepared barista beverages in a welcoming space crafted for families and guests on the go. The café’s inviting atmosphere makes it the perfect spot for morning coffee, midday snacks, or evening treats, providing casual dining options that complement the resort’s fine dining venues.

Beginning November 15, Aurora Anguilla introduces Mexican Nights at Breezes, a weekly celebration of vibrant Mexican cuisine set against the stunning Caribbean backdrop. This themed evening brings the vibrant flavors of Mexico to the Caribbean, featuring a range of regional dishes, tropical cocktails, and a festive atmosphere.

The Saturday evening event adds cultural diversity to the resort’s culinary calendar, offering guests an opportunity to experience bold flavors and lively entertainment in a beachfront setting.

The Resort & Golf Club spans 300 acres, features 178 suites, and includes six restaurants and two bars and lounges, a 22,000-square-foot spa, an 18-hole Championship Golf Course designed by Greg Norman, and a 9-hole short course called Avalon Links.

It sits on the idyllic shores of Rendezvous Bay and Merrywing Bay, offering over two miles of pristine Caribbean beachfront. Beyond dining and accommodations, guests enjoy access to a family-friendly waterpark with lazy river and slides, the Caribbean’s largest pickleball complex, tennis courts, an amphitheater for live entertainment, and the luxurious Sorana Spa.

The resort’s hydroponic farm and orchard produce fresh herbs, vegetables, and fruits daily, reducing the property’s environmental footprint while ensuring exceptional ingredient quality across all dining venues.

Activities for all ages include hydroponic garden tours, cooking classes with resort chefs, wine tastings, PGA-certified golf clinics, coastline hikes, steel pan music classes, and cultural experiences celebrating Anguilla’s rich heritage.

Located just 15 minutes from Clayton J. Lloyd International Airport (AXA) and 10 minutes from Blowing Point Ferry Terminal, Aurora Anguilla offers convenient access for international travelers. American Airlines provides direct flights from Miami, while major East Coast hubs connect through Princess Juliana International Airport in nearby St. Maarten.
